Apple Strudel Filo
Viennese strudel stretched thin — apple, raisin and cinnamon in flaky layers. Rustic, crisp-edged and comforting — the dessert that empties the table quietly. A slice of sharp cheese alongside is old-school and excellent.
Ingredients
- Butter1/2 cup, cold
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Ground Cinnamon1 tsp
- Golden Raisins2 tbsp
- Phyllo Dough1 cup, chopped
- Apple2 cups, chopped
Instructions

Cube the cold butter and return it to the fridge while you measure the rest.

Rub the butter into the flour until you have pea-sized crumbs, then bring it together with ice water.

Chill the wrapped dough thirty minutes to an hour while you prepare the apple.

Layer in the apple with the phyllo dough so every slice gets a full cross-section.

Bake until the crust is browned and the filling bubbles at the vents, 35-50 minutes, then rest twenty minutes.
Chef's tip
Chill the dough when the recipe says so; warm dough spreads into flat, greasy cookies.
