
Banoffee Pie
Biscuit base, slow caramel, bananas and cream — the banoffee architecture. Flaky, buttery pastry around a filling that actually tastes of the season. Good warm or at room temperature the same day.
Ingredients
- Butter3 tbsp
- Heavy Cream1/4 cup
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Condensed Milk1/2 cup
- Banana3, ripe and mashed
Instructions

Work quickly with chilled butter so it stays in visible flakes through the dough.

Rub the butter into the flour until you have pea-sized crumbs, then bring it together with ice water.

Chill the wrapped dough thirty minutes to an hour while you prepare the condensed milk.

Roll, fill with the condensed milk and banana, and crimp or fold the edges well to seal.

Bake until the crust is browned and the filling bubbles at the vents, 35-50 minutes, then rest twenty minutes.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
