
Golden Treacle Tart
Golden-syrup tart with lemon breadcrumb filling, the British school-dinner legend. Golden-crusted and generous, with clean slices and no sogginess. Good warm or at room temperature the same day.
Ingredients
- Butter1/2 cup, cold
- Honey2 tbsp
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Breadcrumbs1 cup
- Shortcrust Pastry1 cup, chopped
- Lemon Zest1 tbsp
Instructions

Work quickly with chilled butter so it stays in visible flakes through the dough.

Rub the butter into the flour until you have pea-sized crumbs, then bring it together with ice water.

Rest the dough, wrapped, in the fridge for at least thirty minutes — relaxed dough will not shrink.

Fold the honey and shortcrust pastry through the dough until evenly distributed.

Bake at 190 C / 375 F for 35-45 minutes until deeply golden and bubbling; cool before slicing so the filling sets.
Chef's tip
With butter-based batters, cream until the mixture actually lightens in colour; that trapped air is your rise.
