
Classic Pistachio Baklava
Forty layers of filo, honey syrup and pistachio — the Ottoman inheritance. Rustic, crisp-edged and comforting — the dessert that empties the table quietly. A slice of sharp cheese alongside is old-school and excellent.
Ingredients

- Honey2 tbsp
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Phyllo Dough1 cup, chopped
- Pistachios1/2 cup, chopped

Keep everything cold — the butter, the water, even the bowl — that is the whole secret of pastry.

Rub the butter into the flour until you have pea-sized crumbs, then bring it together with ice water.

Refrigerate the dough; cold dough rolls cleaner and bakes flakier.

Layer in the pistachios with the phyllo dough so every slice gets a full cross-section.

Bake at 190 C / 375 F for 35-45 minutes until deeply golden and bubbling; cool before slicing so the filling sets.
