Key Lime Pie
Tart key-lime filling in a biscuit crust, the Florida classic that sets by acid. Golden-crusted and generous, with clean slices and no sogginess. Good warm or at room temperature the same day.

Toss the butter through the flour, add just enough cold water to hold, and press into a disc.

Chill the wrapped dough thirty minutes to an hour while you prepare the lime.

Work the lime and condensed milk into the dough, folding gently for even distribution.

Bake at 190 C / 375 F for 35-45 minutes until deeply golden and bubbling; cool before slicing so the filling sets.
