Pumpkin Pie
Spiced pumpkin custard in buttery pastry, the November table centrepiece. Golden-crusted and generous, with clean slices and no sogginess. A slice of sharp cheese alongside is old-school and excellent.
Ingredients
- Butter1/2 cup, cold
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Pumpkin300 g, cubed
- Ground Cinnamon1 tsp
- Shortcrust Pastry1 cup, chopped
- Egg Yolk1 cup, chopped

Keep everything cold — the butter, the water, even the bowl — that is the whole secret of pastry.

Toss the butter through the flour, add just enough cold water to hold, and press into a disc.

Refrigerate the dough; cold dough rolls cleaner and bakes flakier.

Work the pumpkin and shortcrust pastry into the dough, folding gently for even distribution.

Bake until the crust is browned and the filling bubbles at the vents, 35-50 minutes, then rest twenty minutes.
Chef's tip
Room-temperature ingredients blend smoother — pull the dairy and eggs out of the fridge an hour ahead.
